Hummus
Ingredients
- 420g canned chickpeas or 250g cooked chickpeas
- 60ml lemon juice
- 60ml tahini
- 1 garlic clove, minced
- 30ml extra virgin olive oil
- 1/2 teaspoon ground cumin
- 1 teaspoon salt, or to taste
- 45ml cold water or aquafaba

Directions
- In food processor, combine tahini and lemon juice and process for 1 minute.
- Add olive oil, minced garlic, cumin, and 1/2 teaspoon of salt and process for 1 minute until blended.
- Add half of chickpeas and blend for 1 minute.
- Add second half of chickpeas and blend until smooth, about 2 minutes.
- The hummus will likely be too thick. Slowly add aquafaba and blend until desired consistency.
- Taste and adjust as needed.
Notes
- Can be refrigerated for up to one week.
- Can be frozen for up to one month.
