Tomato eggplant gratin

Ingredients
- Tomatoes
- Eggplant (Brinjal/Aubergine)
- Bacon
- Mozzarella cheese
- Parsley (optional)
Directions
- Slice tomatoes and eggplant, equal widths.
- Stir fry bacon until lightly browned.
- Stir fry eggplant in the bacon fat until cooked through.
- Layer eggplant in a pot.
- Layer bacon.
- Drizzle bacon fat.
- Layer tomatoes.
- Season with salt and black pepper.
- Top with (a lot of) cheese.
- Place in oven at 220C for 7 minutes.
Alternatives
- Replace eggplant with mashed potatoes instead.
